Who has one of those consumer grade vacuum sealers? I have very little interest in using the bags, and would just get the mason jar accessory and use it for vacuum marinating meats. Any idea how much vacuum these little wimps pull? And as far as the mason jar accessory, do you have to buy one per jar and leave it on the jar or does it let you use the jar's own lid and let you go from jar to jar ...

Your idea for hacking one together sounds like this . Uses a brake bleeder hand pump.

I ended up doing the Alvin Vacuum Sealer thing in the link there, and got a hand operated brake bleeder kit and the foodsaver attachment. The hand pump was very tedious to pull any good amount of vacuum and was made cheaply enough the best I could get was about 23 inHg. My roommate let me borrow his little 1 gallon compressor so I could use it as a vacuum pump. I put an open valve on the bank...
